Creamy, Dreamy St Patty’s Day Smoothie!

St. Patrick’s Day is this Sunday, and what better way to celebrate than by fueling your body with this power-house smoothie? It’s lovely green hue is derived from two whole cups of spinach mixed in, but you’d never know it based on the flavor! Super creamy and light, it’d be hard to find another smoothie with so much nutrition packed in a single serving for only 160 calories. You could say it’s like trying to find a four-leaf clover ~ once you have it, you’re in luck!
 
 
 
 

St Patty’s Day Super Smoothie

  • 1/2 cup cottage cheese
  • 1/2  scoop (aprrox 2 tbs) vanilla protein powder
  • 2 cups fresh spinach
  • 1 packet stevia
  • 1/2 tsp xanthan gum
  • 4-5 ice cubes
  • 1 cup water (may need more to reach desired consistency)
Place all ingredients in blender and blend until smooth!

    Recipes are easier to follow when you use universal measurements. Your recipe calls for half a “scoop” of protein powder. That’s not so helpful. I have 2 kinds of protein at home. One came with a small scooper, and the other one came with a scooper that more than doubles the size of the small scooper. How much to use? And of which one? ??

    How large is your scoop?

    why do you need Xanthan gum?? what does it do – can you leave out the cottage cheese?? if you are dairy free?? would you need the Xanthan gum still

      Xanthan gum makes the shake thick and creamy. It really doesn’t taste the same without it! You could just up the protein powder to a full scoop and omit the cottage cheese :)

    Where can you get the Xantan gum? Does it matter which protein powder you use? Is there one that is better? Soy or regular?

      You can buy xanthan gum at most grocery stories in the baking isle. If you can’t find it at your regular grocery store, try looking at a natural foods market.
